Pumpkin Apple Pie

Servings: Ingredients:
1 9-inch unbaked pie crust
4 cups raw pumpkin, cubed
2 cups sliced apples
1 cup sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. grated lemon rind of 1/2 tsp. lemon extract
1/4 cup butter
Directions:
  • Combine all ingredients, except butter, and mix well
  • Pour mixture into a prepared pie shell
  • Dot with the butter and cover with second crust
  • Pinch edges together
  • Bake at 400 degrees for 15 minutes, then reduce heat to 325 degrees and continue to bake for 45 additional minutes
