McIntosh Cider Cake

Servings: Ingredients:
12-15 Cake:
1/2 cup butter or margarine
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour, all purpose
2 tsp. baking soda
1/4 teaspoon salt
1 1/2 tsp. apple pie spice
1/4 cup all bran
2 cups McIntosh apples, peeled and chopped
1/2 cup apple cider
3/4 cup nuts, chopped
Cream Cheese Frosting:
1 3 oz. pkg. cream cheese softened
1 1/2 -2 cups powder sugar sifted
1 teaspoon vanilla
2-3 tablespoons milk
Directions:
  • Preheat oven to 325 degrees
  • Cream butter and sugar
  • Add eggs, beat 1-2 minutes
  • Add remaining ingredients
  • With mixer, beat on medium speed 2 minutes
  • Pour into greased and floured bundt pan
  • Bake one hour
  • Cool ten minutes
  • Invert on plate
  • Cool
  • Mix frosting ingredients until smooth and of desired consistency
  • Spread on top and sides of cake
