Baked Apple and Sweet Potato Casserole

Servings: Ingredients:
6 6 sweet potatoes
3 apples
2 Tbs. melted butter
1/2 cup orange juice
1/4 cup dark brown sugar
1/8 tsp. cinnamon
1/8 tsp. allspice
1/4 cup rum
Directions:
  • Boil or steam the potatoes until tender
  • Remove the skin and cut lengthwise into slices
  • Peel and core the apples and slice into rings
  • Butter a 9x6x2 baking dish and alternate layers of potato and apple slices until the dish is filled
  • Add the orange juice, sugar, seasonings, rum and the remaining butter (about 1 Tbls.)
  • Bake in a preheated 350 degree for about 30 minutes
  • The top should be lightly brown and shiny and the liquid should be absorbed
