Baked Apple and Sweet Potato Casserole

Ingredients: |

6 sweet potatoes
3 apples
2 Tbs. melted butter
1/2 cup orange juice
1/4 cup dark brown sugar
1/8 tsp. cinnamon
1/8 tsp. allspice
1/4 cup rum |
| Directions: |
- Boil or steam the potatoes until tender
- Remove the skin and cut lengthwise into slices
- Peel and core the apples and slice into rings
- Butter a 9x6x2 baking dish and alternate layers of potato and apple slices until the dish is filled
- Add the orange juice, sugar, seasonings, rum and the remaining butter (about 1 Tbls.)
- Bake in a preheated 350 degree for about 30 minutes
- The top should be lightly brown and shiny and the liquid should be absorbed
